1 12 oz ribeye steak, room temperature and patted dry
Preheat your Stargazer cast iron skillet on low for 5-10 minutes before turning the temperature up to medium-high. In a small bowl, add the mayo and seasoning and stir with a spoon until thoroughly combined. Slather the mayo mixture generously all over your ribeye steak.
For rare steak: add the steak to the skillet and sear on the first side for 3 minutes. Flip the steak and sear on the second side for 3 minutes. Remove the steak from the skillet and let rest under tin foil for 5 minutes before serving. Add 1½ minutes per side for medium rare, add 3 minutes per side for medium.
