Smoky Maple Bourbon Beans

THE INGREDIENTS

  • 5 pieces of thick cut maple smoked bacon
  • 1 tbsp avocado oil
  • 1 15 oz can pinto beans
  • 1 15 oz can cannellini beans
  • 1 15 oz can black beans (15 oz)
  • 2 fresh ripe peaches, diced
  • 1 ½ cups bourbon BBQ sauce
  • ⅓ cup maple syrup
  • ¼ cup bourbon whiskey
  • 1 ½ tbsp balsamic vinegar
  • 1 ½ tbsp spicy brown mustard
  • 1 tsp chipotle powder
  • 1 tsp smoked paprika
  • 1 tbsp salt
  • ½ tbsp ground black pepper

THE STEPS

  1. On the stove top, preheat your Stargazer Cast Iron skillet on low heat for 5-10 minutes before gradually turning the heat up to medium. Add the avocado oil to your preheated skillet and let heat for 1 minute before adding your bacon to the pan. Fry the bacon until it hits your desired crispness. Remove from the skillet and set aside. 
  2. Preheat your oven or smoker to 275°F. Chop the cooked bacon into ¼” slices. In the skillet, add the beans, bacon, peaches, BBQ sauce, maple syrup, bourbon whiskey, balsamic vinegar, spicy brown mustard, chipotle powder, smoked paprika, salt and ground black pepper. Stir until the ingredients are thoroughly combined. Transfer the skillet into the preheated oven or smoker for 1 ½ hours.
  3. Carefully remove the skillet from the oven or smoker using pot holders or other hand protection. Let stand for 5 minutes before serving.
