Cheeseburger Egg Rolls

We’re pretty much down for anything wrapped in an egg roll. Philly cheesesteak? Sure. Buffalo chicken? Sounds good. Cheeseburger? Hell yeah! Perfect for a super bowl party, your next book club meeting... you get the idea, don't make us tell you where to eat egg rolls. Just make them and thank us later.

The Ingredients

  • ⅓ cup yellow onion, minced
  • 1 lb ground beef
  • 1 tbsp garlic, minced
  • 1 tbsp mustard
  • 1 tsp Worcestershire sauce
  • Salt and pepper to taste
  • Crushed red pepper to taste
  • ¼ tsp smoked paprika
  • 5-7 slices American cheese
  • ¼ cup dill pickles, chopped
  • 1 package (16 oz) egg roll wrappers
  • 1 egg
  • Vegetable oil for frying

Dipping sauce:

  • ⅓ cup mayonnaise
  • ¼ cup ketchup
  • 2 tsp mustard
  • 1 tsp pickle juice
  • ½ tsp garlic powder
  • ½ tsp onion powder

The Steps

  1. Preheat your Stargazer 10.5-inch cast iron skillet over low heat for 3-5 minutes. Raise the heat to medium before adding the onions. Sauté until translucent.
  2. Add the ground beef and garlic. Cook until the meat is brown. Once finished, drain the meat.
  3. Put the skillet back on the stove over low heat and add the mustard, Worcestershire sauce and seasonings to taste.
  4. Once everything is well-mixed, put the cheese slices over the meat mixture. Cover with a lid until the cheese is melted. Stir together and remove from the heat.
  5. Put the meat mixture into a large bowl and add the chopped pickles. Stir together.
  6. Heat the oil in your skillet to 350 degrees while you’re assembling the egg rolls.
  7. Lay out your egg roll wrappers, the meat mixture, egg wash and a plate for rolling up the egg rolls.
  8. Place the egg roll wrapper in a diamond shape. Add a few spoonful's of the meat mixture and roll/fold the wrapper until only the edge is showing. Add the egg wash to the edge and continue rolling into a cylinder.
  9. Once the egg rolls are assembled, add them to the oil in batches of 2-3, making sure to not crowd the skillet.
  10. Fry the egg rolls for about 3-5 minutes, turning them over halfway through. You’ll know they’re done when they turn golden brown.
  11. Remove the egg rolls from the skillet and place on a paper towel to drain any excess oil.
  12. In a small bowl, mix together the dipping sauce ingredients.
  13. Slice the egg rolls diagonally, serve with the dipping sauce and enjoy!
