These delicious dishes (Pulled Pork Lo Mein and Pork Potstickers) are great because they contain all of the major food groups for one well rounded and filling meal in two simple dishes. I think a lot of people avoid making dumplings because the dough and prep feel intimidated. DON’T BE INTIMIDATED! The Ingredients 16 oz lo mein noodles 1 red bell pepper, julienne 1 cup snow pea pods, (stems and strings removed) 1 cup cabbage, shredded 1-2 cups pulled pork (or pre cooked protein of your choice) 2 medium carrots, julienne 1 cup scallions, diced 2 cloves garlic, minced 2 cups mung bean sprouts 1 tablespoon soy sauce 1 tablespoon hoisin sauce 1 teaspoon sesame oil 1/8 teaspoon salt 1/8 teaspoon sugar The Steps In a large saucepan or stock pot, prepare the lo mein noodles according to the directions on the package. On the stove top preheat your large Stargazer Cast Iron skillet on low heat for 5-10 minutes before gradually turning the heat up to medium-high. Once heated, add 2 tbsps of canola oil. Add the red bell pepper, snow pea pods, cabbage and carrots. Cook for 4 minutes. Add the scallions, garlic, mung bean sprouts and pre cooked pork (or other pre cooked protein of your choice). Stir fry for 2 more minutes. Add the cooked lo mein noodles, soy sauce, hoisin sauce, sesame oil, salt and pepper. Stir fry for 2 minutes. Serve immediately.
