Good riddance 2020! Hello 2021! Whatever you ate for luck on New Year’s Day 2020, don’t eat that this year. Eat this roasted pork tenderloin and cabbage instead. This may not be the prettiest dish you’ll ever eat, but it’s guaranteed to be one of the easiest recipes you’ll make all year. It also happens to be good for you, good tasting, and traditionally, good luck. So grab your cast iron skillet, 5 simple ingredients and start 2021 off right with good luck and a good tasting meal!

Pro Tip: The cabbage is going to fill the 12-inch skillet and likely heap over the top. Don’t worry, it will cook down significantly. When you remove the finished product from the oven, your skillet will only be half full of cabbage and your tenderloin. If you are using a 10.5-inch skillet, then fill it as high as you can with cabbage. You’ll be surprised how much will fit and even more surprised how much it cooks down. So heap it on!

THE INGREDIENTS
- 5 tbsp avocado oil
- 1 pork tenderloin
- 1 head of white cabbage, chopped
- 2 tbsp salt
- 2 tbsp pepper
THE STEPS
- On a large stove burner, preheat your Stargazer Cast Iron 12-inch skillet on low heat for 5-10 minutes before slowly turning up the heat to medium-high. First, we need to sear the pork tenderloin. While your skillet preheats, pat your tenderloin dry with paper towels. This prevents the tenderloin from steaming instead of searing. Once dried, coat your tenderloin with 1 tbsp of the avocado oil as a binder for the spices. Take 1 tbsp of the salt and 1 tbsp of the pepper and coat the entire tenderloin evenly. Coat the inside of the skillet with 2 tbsp of the avocado oil. Add the tenderloin to the skillet and sear on four sides for about 2 minutes each or until the surface of the outside of the meat begins to form a brown crust and caramelize. This is going to provide an added layer of amazing flavor to your roasted tenderloin. Remove the tenderloin from the skillet and set aside. Preheat your oven to 400°F.
- With the skillet still on the burner, add the chopped cabbage to the skillet and drizzle evenly with the remaining avocado oil. Sprinkle the remaining salt and pepper evenly over the cabbage. Using a pair of tongs, carefully toss the cabbage in the skillet to evenly coat it with the oil and seasonings. Place the tenderloin on top of the heaping bed of cabbage and carefully move the skillet to the preheated oven. Bake at 400°F for 25 minutes, flipping the meat over once halfway through.
- Carefully remove the skillet from the oven. Remove the tenderloin from the skillet and place on a cutting board to rest for 10 minutes prior to slicing. Cover the cabbage with aluminum foil to keep warm until serving. Serve with mashed potatoes for delicious results.
