Thin Mint Skillet Brownies

I’m not sure about you, but I secretly count down the days until Girl Scout cookie season. I’m a ride or die Thin Mints girl, but I can easily take down a half a box (who am I kidding *a whole box*) of Caramel deLites or Peanut Butter Patties. When I saw it was National Girl Scout Day, the first thing that came to mind was brownies. It may have something to do with me once being a Brownie Girl Scout, but that’s beside the point. While made-from-scratch brownies are a little more work than a boxed mix, I promise you, it is well worth the extra effort. These Thin Mint brownies are everything you could ever imagine and more.

Pro Tip: Not into Thin Mints? Swap them out for your favorite Girl Scout cookies!

The Ingredients

  • 1 ½ sticks of unsalted butter (plus extra for lining the skillet)
  • 2 cups white sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ tsp vanilla
  • ½ tsp salt
  • 4 eggs, lightly beaten
  • ½ cup flour
  • 1 cup chocolate chips
  • 1 sleeve of Thin Mint Girl Scout cookies (crushed)

The Steps

  1. Preheat your oven to 350 degrees and add a layer of butter to the inside of your 10.5-inch Stargazer Cast Iron Skillet
  2. Melt butter in a microwave-safe bowl for about 30 seconds. (Make sure it’s a larger bowl as we’ll be adding in other ingredients.) Mix in the sugar and cocoa powder and microwave for another 30 seconds, until the batter is smooth.
  3. Mix in the eggs and vanilla. Then add in the flour and mix until everything is well combined. Fold in the chocolate chips.
  4. Add half the batter to the buttered skillet and then evenly sprinkle in half of the crushed Thin Mints. Add in the rest of the batter and top with the remaining half of  crushed Thin Mints. 
  5. Bake in the oven for 35-40 minutes or until a toothpick inserted comes out clean. Let the brownies slightly cool before slicing and serving.

Cook Time: 40 min

Serves: 4-6
